6 INGREDIENTS. NOTHING ELSE.

Organic Idukki cocoa beans from Kerala India (46%), organic unrefined cane sugar from the state of São Paulo Brazil (28%), organic cow's milk powder (26% fat) from Pays de la Loire France (14% ), natural organic cocoa butter Norandino origin Piura Peru (12%). Peanut praline insert: organic peanuts from China (64%), organic unrefined cane sugar from the state of São Paulo Brazil (22%), organic Idukki cocoa butter from India (15%), fleur de sel from South-West France . Without lecithin.

Idukki cocoa has its sources in the state of Kerala in southwest India. This region, nicknamed "the garden of God himself", offers fertile land and a very humid climate, suitable for growing cocoa trees.

Nestled in the hills of Idukki, cocoa is grown by some 200 farmers (brought together within the GoGround Beans & Spices agricultural cooperative) in the middle of the forest, in the canopies. It is in the midst of spice plantations, fruit trees and palm trees that the fresh and spicy nuances of these beans develop.

Idukki cocoa beans are the result of a blend of Forastero and Trinitario beans. Idukki cocoa is soft and creamy, with a certain freshness, with hints of spices, cardamom and pepper and on the finish notes of nuts and dried fruits.

Beyond their aromatic quality, we appreciate the possibility of being able to purchase cocoa butter directly from the producer from the same beans and whose aromas are preserved. The cooperative has its own hydraulics which allows it to transform part of its production into cocoa butter and powder. Such an offer is rare. Most of the world's production of cocoa butter and powder is generally deodorized, completely untraceable and therefore the opposite of our expectations.

Each bag delivered is individually transformed into chocolate in the Bean To Bar philosophy, in a "micro batch", in order to stay as close as possible to the aromatic specificities which can vary from one batch to another.

The beans are tasted, sorted, roasted at low temperature, mixed with unrefined cane sugar, cocoa butter and cow's or sheep's milk powder, stone-conched for 3 days. The pure milk chocolate thus obtained will then be melted to be molded and packaged into bars or used to coat our dried fruits and rocks, or in pastries.
