CRUNCHY FRAGMENTS PURE DARK COCOA NIBS CARAMELIZED WITH RASPBERRIES

This fragment is a combination of cocoa nibs (roasted cocoa bean nibs) and raspberry, which are blended and then caramelized together. The nibs are first infused into the crushed raspberries, then everything is passed through a dehydrator. At the end, small pieces of raspberry remain, which are mixed with the nibs.

The resulting nougatine comes in the form of a large slab, which is broken by hand into small pieces of random sizes. The pieces are coated in Maya Mountain 84% Pure Very Dark Chocolate.

These fragments are very crunchy. The combination of the sweet, tangy raspberry, the fruity nibs, and the cocoa of chocolate is a real hit in your mouth!
