RASPBERRY CHIP NOUGATINE

This nougatine is an alliance between cocoa nibs (roasted cocoa bean shards) and raspberries, they are mixed then caramelized together. The nibs are first infused into the crushed raspberries, then everything is put through a dehydrator. At the end there are small pieces of raspberries which are mixed with the nibs.

The nougatine comes in the form of a large plate, which is broken by hand, into small pieces of random sizes. The pieces are coated in pure, very dark Maya Mountain 84% chocolate.

The nougatines are very crunchy. The alliance between the tangy sweetness of the raspberry, the fruitiness of the nibs and the cocoa of the chocolate is made in the mouth!

Chips of Maya Mountain cocoa beans from Toledo Belize, raspberries from Ile-de-France origin and natural and traceable organic cocoa butter origin varying depending on the harvest, caramelized and coated with Pure very dark Maya Mountain chocolate 84% (organic Maya cocoa beans Mountain origin Toledo Belize (84%) and unrefined organic cane sugar origin state of São Paulo Brazil (16%). Without lecithin. No added cocoa butter.
