This nougatine is an alliance between cocoa nibs (roasted cocoa bean shards) and black sesame, they are mixed then caramelized together.

The nougatine comes in the form of a large plate, which is broken by hand, into small pieces of random sizes. The pieces are coated in pure, very dark Maya Mountain 84% chocolate.
