A WORD FROM THE SELLERS

This RANSIKI chocolate is made with a bean that comes from West Papua. It is one of the two chocolate bars made from beans from Asia.

This chocolate is a new signature at PLAQ since it is not tart but cocoa-like. Despite its high percentage of beans, it is not at all bitter and you will be surprised and very quickly addicted to its notes of caramelized cooked fruits and then sweet spices.

At the end of the palate we find cinnamon notes. We also make another chocolate with this Ransiki bean in 76%, an even more regressive version.

Caramelized cooked fruits and dried fruits (dates). Sweet spicy notes including cinnamon. Suave and creamy.

2 INGREDIENTS. NOTHING ELSE.
Ransiki cocoa beans from South Manokwari, West Papua (84%) and unrefined organic cane sugar from the state of São Paulo Brazil (16%). Without lecithin. Without cocoa butter.

Ransiki village is located in the Arfak Mountains area of ​​West Papua. Since 2019, the local government has made it Indonesia's first conservation province.

The legislation protects endangered marine and terrestrial species and enables the conservation of precious rainforests. It also promotes the development of sustainable employment and recognizes the rights of indigenous peoples in the region.

The Eiber Suth cooperative ('Unity to Arise') was established in 2017 and currently employs around 200 residents and manages around 200 on a total of 1,668 hectares, which was fully exploited at its peak in the 1980s.

Cocoa has been at the heart of this region for generations and a collaboration in 2019 between members of the cooperative, the West Papua Provincial Government, the South Manokwari District Government and Pipiltin Cocoa showed how cocoa can help preserve our planet and help empower local communities.

Our partner Biji Kakao Trading aims to select the best cocoa produced in Indonesia, a region known until now mainly for its bulk cocoa. Founded in 2018 by Carolina (of Indonesian origin) and Dejan Borisavljevic (Indonesian at heart), two passionate about sustainable food, who connect Indonesian cocoa farmers with specialist chocolate makers from around the world.

We met Dejan in 2019, during an FCCI training course organized in Amsterdam: “The Cacao Grader Intensive Training”, when his project was still gestational just like ours.

In 2021 during our research to expand our range with a round and spicy cocoa, we tasted and selected Ransiki. 2022 was supposed to be an opportunity to visit the farms, but the presence of Covid in the region made this trip too adventurous to be reasonable. This is only a postponement.

Ransiki beans are hybrids of Forasteros and Trinitarios cocoas from the Northern Amazon. Within this virtuous ecosystem, cocoa grows in the best possible conditions and gives rise to very interesting aromas. Ransiki cocoa has floral and fruity notes, but also dried fruit, and toasted, buttery notes.

We buy this cocoa in 52Kg bags from Biji Cacao which imports and stores all its Indonesian cocoa in Amsterdam. Each bag delivered to the Manufacture in Paris, rue du Nil, is individually transformed into 76% or 84% chocolate in the Bean To Bar philosophy, in "micro batch", in order to stay as close as possible to the aromatic specificities which can vary from one batch to another.

The beans are tasted, sorted, roasted at low temperature, mixed with unrefined cane sugar, stone-conched for 3 days before resting for 3 weeks. The pure chocolate thus obtained will then be melted to be molded and packaged into bars.
